The Restaurant

A Menu Shaped by the Season and the Coast

Our head chef builds each menu around what's arriving from local South Coast fishing boats and nearby Sussex farms, with the dining room's large windows overlooking the promenade as the sun sets. Tables are candlelit, service is unhurried, and the wine list leans heavily on English and small European producers.

Dinner is served nightly, with a shorter seasonal lunch menu available for hotel guests and visitors alike.

The Bar

Cocktails, Piano, and a Slow Kind of Evening

Once dinner winds down, most guests move through to the bar — a low-lit room of velvet armchairs and backlit shelving, where a pianist performs most evenings and the cocktail list changes with the seasons.

Live Piano Evenings

Most nights from early evening, a resident pianist sets the tone for the bar — and often carries gently through to the casino lounge beyond.

A Typical Evening

Dinner, Drinks, and Whatever Comes Next

7:00 PM — Dinner

Tables are typically seated from 7pm, with the dining room at its liveliest between 8 and 9.

9:30 PM — Bar

Guests drift through to the bar for a digestif or cocktail as the piano set begins.

10:30 PM — Lounge

For those in the mood, the casino lounge opens just beyond the bar, staying lively into the early hours.
